Brinjal is a vegetable that people like a lot. It has many beneficial elements. Therefore, include brinjal in your diet.

If you want to eat brinjal, include stuffed brinjal in your diet. These will be very tasty to eat, and they are also straightforward to make.

How to prepare brinjal vegetables at home

The secret ingredient that is being added to brinjal vegetable is dry coconut. It will increase the taste of the vegetable by two times, making the taste two times more delicious.

In such a situation, to make stuffed brinjal, make an X-shaped incision in the brinjal. After this, check for insects in it and put it in water.

Then, fill salt, turmeric, and red chilli powder in the brinjal. You have to fill half of the masala in these brinjals.

After this, deep fry the brinjal in oil. This is because if you cook them in gravy, they will start breaking and become very soft.

When the brinjal is fried well, add chopped ginger, dry coconut, and garlic. After these are fried, add green chillies, onions and tomatoes and fry them well.

When this masala becomes very soft, take it off the gas, cool it and grind it to make it coarse.

This will be the base of the gravy, and the coconut flavour will be delicious.

Now you have to take oil and heat it, add cumin seeds, mustard seeds, asafoetida, big cardamom, bay leaves and temper it.

Then add a chopped onion and fry the onion for half a minute. Then add turmeric and red chilli powder to it.

By mixing all these well, the taste of the vegetable will be delicious. You can also mix moong pod powder as you wish.

Due to this, the taste of brinjal will increase a lot. Then, add water to it so that the gravy base is ready. Then you have to add salt to it according to taste.

Then, add brinjals and some green chillies, increasing the taste of brinjal by up to two times.

Now cook these brinjals for 6-7 minutes. Here, the brinjal curry is ready.

Add green coriander and lemon juice to it. Serve and eat it hot with roti or rice.
